Gongfu Bao started as a simple yet ambitious food cart. We've since grown into a brick & mortar neighbourhood eatery with a fast-casual inspired operating model. Since our humble food cart days, what we make & how we make it have been equally essential. Our core values are dedication to craft, responsible labour, & sustainable sourcing.

We approach the food cultures of origin (namely HongKong, Cantonese & Taiwanese) with respect & mindfulness. Our core menu changes very slowly, while limited seasonal features offer creative & playful opportunities.

We designed the work experience around craft-focused production/prep & flow-focused service (with some skill intensive elements). We value clear & mindful communication in the shop for safety & synchronicity.
